As is the case with many companies, Marshall Field's regularly used "Mystery Shoppers" to ensure that excellent service standards were being achieved.

Shown above are the "4.0" Awards received by one employee over the course of approximately 2 years. Not only was it gratifying for the employee to know that he or she had been "caught" giving excellent service, these awards were also conducive to a great review which effected a raise for the employee. Below is a closer look at the award area, though the employee's name, the manager's signature, and the store location have been artfully removed at the employee's request.

These 4.0 Awards were not only one of many employee incentives, but also serve as a testament to the service excellence that Marshall Field & Company has been known for around the world.

BREAKFAST SMOOTHIE
Calories per serving: 140 Total fat: 1g

2 cups plain fat-free yogurt
8-oz. can crushed pineapple in juice, drained
1 ripe medium banana
4 packets sugar substitute
1 cup ice cubes
1 tsp. vanilla extract
1/8 tsp. ground nutmeg

Place all ingredients in blender. Cover.
Blend until smooth. Makes 4 servings.

QUICK-FIX HEARTY SOUP
Calories per serving: 148 Total fat: 3g

15-oz. can Great Northern beans
14½-oz. can diced tomatoes with green peppers and onions
1 cup water
1½ tsp. dried basil
1/2 tsp. chicken bouillon granules
2 tsp. olive oil

Place all ingredients in medium saucepan.
Bring to a boil over high heat.
Reduce heat and simmer 5 minutes, uncovered.
Remove from heat. Makes 4 servings.

LOW-FAT QUESADILLAS
Calories per serving: 470 Total fat: 7g

8 fat-free flour tortillas
1/2 cup black beans
1/2 cup whole kernel corn
1 green onion, chopped
1/4 cup fresh cilantros, chopped
1/4 tsp. ground cumin
3/4 cup reduced-fat Monterey Jack cheese, shredded
1/2 cup fat-free sour cream

Preheat oven to 450°F.
Spray baking sheet with nonstick cooking spray and place 2 tortillas on sheet.
Mix beans, corn, onion, cilantro and cumin in small bowl.
Spoon half of the mixture evenly over tortillas and top with half of the cheese.
Cover with 2 tortillas. Bake 10 to 12 minutes. Repeat.
Cut into quarters and serve with sour cream. Makes 4 servings.

BLUEBERRY FRENCH TOAST
Calories per serving: 314 Total fat: 4g

8 slices whole grain bread
1 cup skim milk
1/4 cup sugar-free maple syrup
1 tsp. cinnamon
1 cup blueberries

Cut bread slices into triangles. Arrange slices in baking pan.
Combine milk, syrup and cinnamon in bowl and pour over bread.
Allow bread to soak up liquid (up to 20 minutes).
Using a nonstick skillet, heat slices until bread turns brown and crispy.
Garnish with blueberries. Makes 4 servings.

PITA SALAD SANDWICH
Calories per serving: 370 Total fat: 6.5g

2 cups Romaine lettuce, chopped
1 cup tomatoes, chopped
1/2 cup carrots, chopped
1/2 cup cucumber, chopped
1 cup fat-free cheddar cheese
2 Tbsp. fat-free Italian dressing
4 whole wheat pita pockets

Steam lettuce, tomatoes, carrots and cucumber.
In bowl, mix vegetables with cheese and dressing. Stuff pitas.
If desired, warm in microwave for up to 30 seconds. Makes 4 servings.

TERIYAKI WRAPS
Calories per serving: 370 Total fat: 6g

1/2 lb. boneless, skinless chicken breasts
1 tsp. minced ginger
1 tsp. minced garlic
1 red pepper, diced
1 green onion, sliced
1/4 cup low-sodium teriyaki sauce
4 cups coleslaw mix
4 fat-free flour tortillas

Cut chicken into 1/2-inch pieces.
Spray nonstick cooking spray in large skillet
and stir-fry chicken for 2 to 3 minutes until golden.
Add ginger, garlic and red pepper.
Stir-fry for additional 2 to 3 minutes.
Add onion and teriyaki sauce. Mix well.
Add coleslaw and cook until crisp.
Add 2 spoonfuls to each tortilla and roll tightly. Makes 4 servings.

There is a growing number of consumers calling for the return of Marshall Field's. While I have tried to refrain from mentioning the usurper - macy*s - and focus on the fineness of Field's, I must plainly say that action often speaks louder than words. In this case, I personally exhort you to take action which can effectively work toward the return of Marshall Field's. Please join FieldsFansChicago.org members and others who know that two of the most important steps you can take to effect change in this matter are to:

BOYCOTT MACY'S AND BLOOMINGDALE'S.

While Bloomingdale's is not as obvious as being owned by Macy's Group, Inc., it indeed is. To shop at Bloomingdale's while boycotting Macy's stores is to effectively support Macy's in their contemptuous, greedy, and disrespectful practices. Indeed, many fine stores have succumbed to Macy's; Burdine's in Florida, Lazarus in Ohio, The Bon Marche in Washington, Foley's in Texas, Filene's in Massachusetts, Kaufmann's in Pennsylvania, Meier & Frank in Oregon - and the list goes on and on. Certainly the most uproar has taken place in Chicago, Illinois due to Macy's eradication of the world-renowned Marshall Field & Company while Macy's incredibly sees fit to have commandeered the many fine traditions established by Marshall Field & Company and to act as if they (Macy's) had been providing these all along.

So I'll say it again. And perhaps AGAIN. And even one MORE time:

BOYCOTT MACY'S. BOYCOTT BLOOMINGDALE'S. BOYCOTT MACY'S. BOYCOTT BLOOMINGDALE'S.

American Tallcase Tubular Chime Clock -BRS-06- $5,550
Signed “ Marshall Field ”

This is a beautiful example of an American mahogany case with a German tubular chime movement. Untypical of the case are the hand-carved claw feet, which are most commonly found on more elaborate cases from the likes of Horner and Durfee. This is a very elegant design -- architectural-topped case and dial, suitable for the display in the finest homes or offices.
Physical Description: 30"w x 97"h x 20.25"d; 80" smooth columns; dial diameter 13.25"; 18.75" from top of dial to peak of architectural top. Note the heavy carved paw feet -- very impressive.

Movement: Chain-wound eight-day time and Westminster strike tubular chime movement with three weights. Dial is signed "Marshall Field", indicating the clock was originally sold at Marshall Field (likely in Chicago). Many makers private-labeled clocks for the large high-end retailers like Tiffany and Marshall Field; this clock is a fine example of that practice.

First USA World of JLo Shop Opens at Marshall Field's, Chicago

Actress/singer/dancer and now fashion designer Jennifer Lopez opened the first World of JLo Shop in the United States at Marshall Field's on State Street in Chicago in September of 2005. This launch coincided with a charitable fundraiser for Children's Memorial Hospital.

Training Employees How To Offer the Marshall Field's Charge Card

A Marshall Field's charge card of more recent times

[According to various reports, Marshall Field & Company was the first business to offer revolving credit. This may have actually started with independent Chicago businessman Potter Palmer, prior to Palmer's partnership with Marshall Field and Levi Leiter to form Field, Palmer & Leiter, which eventually became Marshall Field & Company.]

New employees of Marshall Field's were given excellent training as regarded offering the Marshall Field's Charge Card to guests who didn't already have one, as well as asking current cardholders if they would like to use their Marshall Field's Charge to pay for their purchases. Because some employees might be shy in asking, they were trained as to all of the benefits which would be extended to the guests as a result, making it much easier to present the offer in a very customer-friendly manner. While the details of such benefits will be covered in a future post, a brief synopsis of the training will be given here.

Pictured below are the pages of a handy fold-out given to employees, with the easily memorable catchphrase, Ask Today Your Way. This approach took into account the fact that each employee had his/her own distinct personality, conversational style, and unique relationship with the guest(s). Employees could "be themselves" and remain personable using this more natural and preferable method rather than resort to using robotic, mechanical, and impersonal hard-sell tactics.

The first is FieldsFansChicago.org which was born of necessity due to the grassroots movement of multiple thousands who protested Macy's move to disregard 150 years worth of Chicago history, business and culture by removing Marshall Field's name, quality, and reputation from the Chicago market and elsewhere in the Midwest. At the same time, Macy's has usurped the many fine traditions established by Marshall Field's, acting as if they instead were the originators of such fine traditions.

Marshall Field's Employees Earned Their Stripes

New Marshall Field's Employees received a "Stripe Card" and an accompanying informational placard about the "Earn Your Stripes" incentive program. It was really quite simple, and most employees participated very seriously!

At each wrapstand (cash register counter) was a chart showing each area's average sales transaction amount, along with figures showing 3X, 5X, and 10X those averages.

For every sale made for 3X the average, the employee would receive 1 stripe. For a sale of 5X the average, 2 stripes. And for a sale of 10X the average, 3 stripes.

Each stripe card had a total of 20 spaces (!) to be stamped with a green-inked stamper in the same exclamation-point shape as the spaces on the stripe card. Managers and Field's Express Team members could stamp the cards for the employees as they called via radio to let it be known (quite proudly and gladly) that they had achieved these results. As their calls came in, the employees were congratulated and announced via radio also, then their card stamped. (Field's Express Team members could participate in the rewards of this program also, though they could not stamp their own individual cards.) When stripe cards were filled, they could be redeemed for various prizes. For example:

1 full stripe card might be redeemed for a large candy bar,
2 full stripe cards might be redeemed for a Marshall Field's T-shirt
3 full stripe cards might be redeemed for a Marshall Field's Sweatshirt or the employee's choice of a $5 Marshall Field's, Speedway, or Blockbuster Video gift card.

There were higher levels also, with weightier prizes such as luggage. 10 full stripe cards could be redeemed for a $20 gift card of choice, for example.

Marshall Field's employees were given encouraging incentives such as the "Earn Your Stripes" cards, providing them a sense of accomplishment and true rewards. At the same time, this simple program was such that it did not create combative competitions between employees but rather a healthy and shared sense of success. Who could possibly contrive a 3X, 5X, or 10X sale without being horribly pushy? No one! It was therefore more of a sense of elation when it happened because it was a direct result of what Marshall Field's was known for: giving excellent service and delivering the unexpected.

Pictured left is a bookmark of sorts, given to Marshall Field's guests to let them know of the above-and-beyond services which were standard fare at all Marshall Field's stores. This was also given to FIELD'S EXPRESS team members to serve as a handy reference tool. This particular bookmark shows the Michigan stores, their phone numbers, and the e-mail addresses for FIELD'S EXPRESS at each location.

Pictured right is something Marshall Field's guests are sure to remember - a Package Pick-up label sheet. There were no shopping carts at Marshall Field's. Guests who had large purchases, too heavy to carry, could have their purchases taken to Package Pick-up - typically located at the Guest Services Desk. FIELD'S EXPRESS team members were called via radio to the department to pick up the purchases and take them to Package Pick-up. Guests were given a sheet of labels, so that they could continue shopping in other departments and use additional labels if necessary. When they were through shopping, they could park their vehicle outside Package Pick-up and receive assistance, if needed, loading the packages into their vehicle. FIELD'S EXPRESS team members were available for this and many other special services.

EVERY 20 MINUTES
The Surgeon General advises that we exercise 3 to 4 times a week for 20 minutes to maintain good health. And the longer you exercise the more fat you burn.

First 20 minutes: You burn 80% carbs to 20% fat.

GET YOUR HEART PUMPING
Aerobic exercise can be anything that keeps your heart beating fast for 30 minutes or more, including running, fast walking, dancing, cycling and more. It’s the only form of exercise where you burn both carbohydrates and fat. Don’t push yourself too hard though. A good aerobic zone allows you to still have a conversation with a workout partner without losing your breath.

ASSESS YOUR ACTIVITY LEVEL
The daily amount of calories and fat grams your body requires for weight maintenance varies on your activity level. A moderately active person is busy at work and exercises occasionally but infrequently, and an inactive person has a lifestyle without much physical exertion. Determine your activity level first. Then develop your fitness plan.

MUSCLE-BOUND
Strength training uses resistance like weights and body weight to improve muscle tone and endurance. Research shows that without strength training we lose over a half-pound of muscle every year. Since muscle burns fat, it’s easy to understand why adding strength training to your exercise routine is very beneficial.

WEIGHT MANAGEMENT
Maintaining your weight and losing weight mean counting your caloric intake, and caloric needs vary depending on your activity level.

Inactive Woman: Weight Maintenance 1700 cal. Weight Loss 1360 cal.

MAIN BODY: Early in Queen Elizabeth’s reign Great House, Whitehall, was built in Shrewsbury town by one Master Frynce. “Four years in buyldings to hys great chardge, with fame to him and hys posterite for ever,” it was a splendid mansion, but never so splendid as the paneled walls of oak, added later. What tales those magnificent walls could tell!...and their story has not ended. One that looked on Charles the First three centuries ago watches the head of a Chicago bank today.
